Better for You Mayo

Are you a lover of mayonnaise? Try this creamy seed and nut based mayo that tastes better than the real deal. Dr. Joel Furhman's seed and nut based mayo has 179 calories per serving, 6g of protein, 14g of carbs, 6g of sugars, 4g of sodium....and wait for it 0 grams of Cholesterol!!! This recipe serves 10 and can be used on burgers, wraps or as a dip or salad dressing.


INGREDIENTS

1 3/4 cups raw cashews, soaked in water for 2 hours, then drained

1/4 cup hemp seeds

3 medjool or 6 regular dates, pitted

4 cloves garlic

4 tablespoons apple cider vinegar

1 lemon, juiced


INSTRUCTIONS:

Place all ingredients in a high-powered blender and process until creamy. Store in a covered container in the refrigerator for up to one week.


Note: To make sour cream, double the apple cider vinegar.

For cajun mayo, add 1 tablespoon curry powder, 1 teaspoon chili powder, and 1/2 teaspoon chipotle powder or cayenne.
